Ingredients
2 lbs. lean ground beef or turkey
1 red onion, chopped
2 cloves minced garlic
1 large can (29.5 oz) can tomato sauce
1 can (16 oz) diced tomatoes
3 cups beef stock
3 carrots, chopped (about 1 cup)
1 green bell pepper, chopped
2 large sweet potatoes, peeled and cubed (about 4 cups)
2 bay leaves
2 tsp. Himalayan salt
1 1/2 teaspoons black pepper
1/4 cup chili powder
3 Tbsp cumin
2 tbsp olive oil
dash of oregano
dash of red pepper flakes
Directions:
Brown the ground beef on the stove, then put it all in your crock pot with all the other ingredients and let it simmer on low all day (6-8 hours) or on high for 4-5 hours. It made 12 servings for us!
We froze the extras, if you don’t want extra, you can half everything, but it will cook faster so watch it carefully.
