
Paleo Kielbasa, Pepper, Onion and Sweet Potato Hash
This paleo kielbasa and sweet potato hash is a hearty, one-pan meal that’s full of flavor and perfect for breakfast, lunch, or dinner. With crispy potatoes, savory sausage, and sautéed peppers and onions, it’s simple comfort food that comes together fast.
Ingredients
1 (14 oz) package turkey kielbasa, sliced into 1/4-inch rounds
1/2 green bell pepper, diced
1/2 red, yellow, or orange bell pepper, diced
1 onion, diced
1 large sweet potato, peeled and diced
Olive oil
Salt and pepper, to taste
Red pepper flakes (optional)
Directions
Heat 2 tablespoons of olive oil in a large skillet or cast-iron pan over medium-high heat.
Add the diced sweet potatoes, season with salt and pepper, and cook for 8–10 minutes, stirring occasionally, until golden brown and tender.
In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced kielbasa and cook for about 5 minutes, until browned. Remove from the pan and set aside.
In the same skillet, add the diced peppers and onion. Cook for about 5 minutes, stirring occasionally, until softened.
Add the cooked sweet potatoes and kielbasa back to the pan with the vegetables. Toss everything together and cook for another 2–3 minutes to combine flavors.
Season with additional salt, pepper, and red pepper flakes if desired. Serve hot.
