
Jicama-Avocado Salad
This jicama avocado salad is crisp, refreshing, and lightly sweet with a bright citrus finish. It’s a perfect side dish for warm weather or a light, refreshing addition to any meal.
Ingredients
1/2 teaspoon Himalayan salt
1 tablespoon agave nectar
Juice of 1 lime
1 1/2 teaspoons extra virgin olive oil
1/2 ripe avocado, cut into chunks
1/2 medium jicama, peeled and cut into thin matchsticks
2 tablespoons fresh cilantro, chopped
Directions
In a large bowl, whisk together the salt, agave nectar, lime juice, and olive oil.
Add the avocado, jicama, and cilantro to the bowl.
Gently toss until everything is well coated.
Refrigerate for at least 1 hour to allow flavors to blend.
Serve chilled.
