
Simple Microgreen Salad

Ingredients
1/4 cup shredded carrot
1/4 cup chopped cucumber
1/4 cup sliced red bell pepper
1/4 cup sprouts (such as radish, alfalfa, or broccoli)
1/4 cup chopped tomato
1/4 cup chopped jicama
Fresh herbs such as basil, cilantro, parsley, or dill
1/3 cup mixed nuts or seeds (such as cashews, pecans, pumpkin seeds, or sunflower seeds)
Mixed baby greens or microgreens of choice
Directions
Add the mixed greens or microgreens to a large bowl.
Top with carrot, cucumber, bell pepper, sprouts, tomato, and jicama.
Sprinkle with fresh herbs and toasted nuts or seeds.
