
Paleo Buffalo Breakfast Patties – aka Meat Cookies!
These paleo buffalo breakfast patties are savory, filling, and ridiculously easy to make. They’re perfect for meal prep, breakfast on the go, or anytime you want a protein-packed option that actually tastes good.
They may look a little green (thanks, spinach), but trust the process — they’re delicious.
Ingredients
2 pounds ground buffalo (bison)
3 slices nitrate-free bacon (chopped)
1 onion, finely chopped
5 cloves garlic, minced
1/2 bag fresh spinach, chopped
Optional: any extra veggies you need to use up
Italian seasoning, to taste (Penzeys is great if you have it)

Directions
Preheat the oven to 400°F.
In a large bowl, combine the onion, garlic, bacon, and spinach. Mix well.
Add the ground buffalo and Italian seasoning. Use your hands to gently mix everything together until just combined. Do not overmix.
Form the mixture into 2-inch patties and place them on a rimmed baking sheet (trust me, you want the sides to catch the juices).
Bake for about 10 minutes, then remove the pan and gently flip or press the patties down to flatten slightly. Drain off excess grease if needed.
Return to the oven and bake another 5–7 minutes, or until fully cooked through.
Let rest for a few minutes before serving.

Makes 10–12 patties, depending on size.
