This paleo egg roll in a bowl delivers all the bold, savory flavors of a classic egg roll without the wrapper. It’s quick to make, loaded with protein, and perfect for an easy weeknight dinner or meal prep.
Ingredients
1 pound ground pork sausage
6 cups coleslaw mix or shredded cabbage
1/4 cup shredded carrots
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons coconut aminos
1/4 cup green onions, chopped
2 tablespoons toasted sesame seeds
1 tablespoon sesame oil
Directions
Heat a large skillet over medium heat.
Add the sausage, garlic, and ginger. Cook, breaking up the meat, until fully browned.
Stir in the coleslaw mix and shredded carrots. Cook for about 5 minutes, until the cabbage softens slightly.
Add the coconut aminos and stir to combine.
Remove from heat and sprinkle with green onions and sesame seeds.
Drizzle with sesame oil just before serving.
