Paleo Pizza Egg Cups – Breakfast or Snack!

These paleo pizza egg cups are a fun, savory breakfast or snack that tastes like pizza but fits right into a clean, protein-packed meal plan. They’re perfect for meal prep, reheat well, and make busy mornings way easier.


Ingredients

  • 1 tablespoon olive oil

  • 3 tablespoons red onion, diced

  • 1 tablespoon tomato paste

  • 2 cups diced tomatoes

  • 1 cup diced pepperoni

  • 10 large eggs

  • 1 small can sliced black olives

  • 2 tablespoons pizza seasoning (or to taste)


Directions

  1. Preheat the oven to 325°F.

  2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 5 minutes.

  3. Stir in the tomato paste and cook until well combined with the onions.

  4. Add diced tomatoes and pepperoni. Cook for about 4 minutes, stirring frequently. Remove from heat and allow to cool slightly.

  5. In a large bowl, whisk the eggs until fluffy.

  6. Add the cooled vegetable and pepperoni mixture to the eggs along with the pizza seasoning. Stir to combine.

  7. Grease a muffin tin well or use silicone liners.

  8. Pour the mixture into the muffin cups, filling each about ¾ full.

  9. Bake for 25–30 minutes, until the tops are set and lightly golden.


Servings

Makes 12 egg cups.
