
Paleo Pizza Egg Cups – Breakfast or Snack!
These paleo pizza egg cups are a fun, savory breakfast or snack that tastes like pizza but fits right into a clean, protein-packed meal plan. They’re perfect for meal prep, reheat well, and make busy mornings way easier.
Ingredients
1 tablespoon olive oil
3 tablespoons red onion, diced
1 tablespoon tomato paste
2 cups diced tomatoes
1 cup diced pepperoni
10 large eggs
1 small can sliced black olives
2 tablespoons pizza seasoning (or to taste)
Directions
Preheat the oven to 325°F.
Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 5 minutes.
Stir in the tomato paste and cook until well combined with the onions.
Add diced tomatoes and pepperoni. Cook for about 4 minutes, stirring frequently. Remove from heat and allow to cool slightly.
In a large bowl, whisk the eggs until fluffy.
Add the cooled vegetable and pepperoni mixture to the eggs along with the pizza seasoning. Stir to combine.
Grease a muffin tin well or use silicone liners.
Pour the mixture into the muffin cups, filling each about ¾ full.
Bake for 25–30 minutes, until the tops are set and lightly golden.
