
Paleo Pulled Pork Stuffed Sweet Potatoes
These paleo pulled pork stuffed sweet potatoes are one of those meals that feels hearty, comforting, and nourishing all at once. They’re perfect for meal prep, family dinners, or anytime you want something filling without a lot of fuss.
The pork cooks low and slow until it practically falls apart, and the sweet potatoes add just the right amount of natural sweetness to balance everything out.
Ingredients
2 lbs boneless pork loin (center cut works best)
2–6 sweet potatoes (I prefer the smaller ones so portions stay reasonable)
1/2 red onion, very thinly sliced
2 green onions, chopped
2 cloves garlic, minced
1 cup beef stock
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon ground cumin
1/4 cup apple cider vinegar
1 cup BBQ sauce (or more to taste)
Optional note: If you follow paleo strictly, use a compliant BBQ sauce. If not, use what you love.
Directions
In a small bowl, combine chili powder, paprika, cumin, salt, and pepper. Rub the mixture evenly over the pork.
Place the pork, sliced onion, garlic, and beef stock into a slow cooker.
Cook on low for 6–8 hours, until the pork easily pulls apart with a fork.
About one hour before the pork is done, preheat your oven to 400°F.
Wash the sweet potatoes, poke several holes with a fork, and place them on a foil-lined baking sheet (trust me on the foil, sweet potatoes get messy).
Bake for 45–60 minutes, until tender.
During the final 30 minutes of cooking, stir the apple cider vinegar and BBQ sauce into the slow cooker.
Once everything is done, split the sweet potatoes down the center and fill with the pulled pork mixture.
Top with chopped green onions and serve warm.
