
Roasted Root Medley Recipe – Healthy Thanksgiving Alternative
This roasted root vegetable medley is a simple, comforting side dish that works beautifully for holidays or everyday dinners. It’s naturally sweet, hearty, and full of flavor, making it a perfect alternative to traditional starch-heavy sides.
It’s also one of those recipes that gets better the longer it roasts, caramelizing the vegetables into something warm and satisfying.
Ingredients
1 medium yam, cut into 1-inch chunks
4 medium carrots, cut into 1-inch chunks
4 medium beets, cut into 1-inch chunks
1 medium onion, diced
4 teaspoons extra-virgin olive oil
Granulated garlic or garlic salt, to taste
Black pepper, to taste
Himalayan salt, to taste
Directions
Preheat the oven to 400°F.
In a large bowl, combine the yams, carrots, beets, and onion.
Drizzle with olive oil and season with garlic, salt, and pepper. Toss until evenly coated.
Spread the vegetables in a single layer on a large baking sheet.
Roast for 60–75 minutes, stirring once or twice during cooking, until vegetables are fork-tender and lightly caramelized.
Remove from the oven and serve warm.
