
Spinach and Onion Scramble

Ingredients
1 large egg
4 large egg whites
1 pinch sea salt
1 pinch ground black pepper
1 teaspoon olive oil
1/2 cup fresh baby spinach
1/2 cup chopped onion
Directions
In a medium bowl, whisk together the egg, egg whites, salt, and pepper until well combined.
Heat the olive oil in a nonstick skillet over medium-low heat.
Add the spinach and onion to the skillet and cook, stirring frequently, for 2 to 3 minutes until softened.
Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully set.
Remove from heat and serve warm.
