Ingredients

  • 1 large egg

  • 4 large egg whites

  • 1 pinch sea salt

  • 1 pinch ground black pepper

  • 1 teaspoon olive oil

  • 1/2 cup fresh baby spinach

  • 1/2 cup chopped onion


Directions

  1. In a medium bowl, whisk together the egg, egg whites, salt, and pepper until well combined.

  2. Heat the olive oil in a nonstick skillet over medium-low heat.

  3. Add the spinach and onion to the skillet and cook, stirring frequently, for 2 to 3 minutes until softened.

  4. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully set.
