This tuna garden salad is a light, protein-rich meal made with fresh vegetables and simple ingredients. It’s quick to prepare, refreshing, and works well for lunch or an easy no-cook dinner.

Using canned tuna keeps things convenient while still providing lean protein, and the lemon and vinegar add brightness without the need for heavy dressings.


Ingredients

  • 3/4 cup canned light tuna in water, drained (about 4.5 oz)

  • 1 teaspoon extra-virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1 cup romaine lettuce (or other dark leafy greens)

  • 1/4 cup sliced cucumber

  • 1/4 cup sliced red radishes

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup thinly sliced red onion

  • Red wine vinegar, to taste


Directions

  1. In a small bowl, combine the tuna, olive oil, and lemon juice. Mix well.

  2. Arrange the lettuce on a large serving plate.

  3. Top with cucumber, radishes, tomatoes, and red onion.

  4. Spoon the tuna mixture over the salad.

  5. Drizzle lightly with red wine vinegar and serve.
