My boyfriend LOVES ice cream and I literally never keep it in the house. Since I dragged him into paleo eating I’d been looking for a way to get him something close. I have tried the famous “One Ingredient Ice Cream” made from bananas, and I do like it, but I was still looking.
I actually came across a version of this dessert with sugar and some sort of weird gum in it, but I decided we had to find a way to make this paleo and I did 😀
Ingredients
- 4 to 5 cups (seedless) watermelon chunks
- Juice of one lime
- 1/3 cup honey or agave nectar
Directions
Start by cutting your watermelon in half. If you’re going to freeze your shaved ice in the rind then but them back in the freezer while you scoop the watermelon out.
When your watermelon is chunked, blend it together with your lime juice and agave nectar in a food processor or blender until smooth.
Pour back into cold rind and freeze.
Once solid, scrape with an ice cream scoop or spoon off the top and serve 🙂
