This loaded baked potato is a simple, comforting meal made lighter with turkey bacon and low-fat toppings. It’s quick to prepare, satisfying, and works well for lunch or an easy dinner when you want something warm without a lot of cooking.

Using the microwave keeps prep time short while still delivering classic baked potato flavor.


Ingredients

  • 1 medium baked potato

  • 1 tablespoon low-fat sour cream

  • 1 scallion, diced

  • 1 slice turkey bacon, cooked and crumbled

  • 1 slice low-fat cheese


Directions

  1. Wash the potato and pierce the skin several times with a fork.

  2. Microwave on high for about 7 minutes, or until the potato is fully cooked and tender.

  3. Carefully slice the potato open down the center.

  4. While the potato cooks, microwave the turkey bacon until crisp, then crumble.

  5. Top the potato with sour cream, scallion, turkey bacon, and cheese.

  6. Serve warm.
