Curried Cauliflower

This curried cauliflower is a simple roasted vegetable dish with warm spices and minimal ingredients. Lightly coated in olive oil and curry powder, the cauliflower roasts until tender and flavorful, making it an easy side dish or plant-based meal option.

Blooming the curry powder briefly in oil helps deepen the flavor without overpowering the dish.


Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 1/2 to 1 teaspoon curry powder

  • 1/2 large head cauliflower, stem removed and cut into large florets

  • 1/2 teaspoon Himalayan salt, or to taste


Directions

  1. Preheat the oven to 400°F.

  2. Heat the olive oil in a small nonstick sauté pan over medium-low heat.

  3. Add the curry powder and stir for 15 to 30 seconds, just until fragrant. Do not allow it to burn.

  4. Place the cauliflower florets in a bowl. Pour the oil and curry mixture over the cauliflower and add salt. Mix well to coat evenly.

  5. Arrange the cauliflower in a single layer in a glass baking dish.

  6. Bake for 20 to 25 minutes, stirring gently a few times, until the cauliflower is tender.
