1 cup quinoa

2 cups cold water


Rinse quinoa thoroughly and drain. Place quinoa and water in a medium saucepan with a tight-fitting lid and bring to a boil. Reduce heat to a gentle simmer and cook for 15 minutes, or until all water has been absorbed. Remove pan from the heat and let quinoa sit, covered, for 5 minutes. Fluff with a fork and serve.

Serves 4.
