Spinach and Onion Scramble

1 large egg

4 large egg whites

1 pinch sea salt

1 pinch ground black pepper

1 tsp. olive oil

1/2 cup fresh baby spinach

1/2 cup chopped onion


Directions: Combine egg, egg whites, salt, and pepper in a medium bowl, whisk to blend. Set aside. Heat oil in medium nonstick skillet over medium-low heat Add spinach and onion, cook, stirring frequently, for 2 to 3 minutes Add egg mixture, cook, stirring frequently, for 2 to 3 minutes, or until eggs are cooked through.
