Mixed Veggie Salad with Grilled Chicken Breast

1 cup fresh baby spinach leaves

3/4 cup shredded (or chopped) grilled chicken breast, boneless, skinless (about 3.75 oz)

1/4 cup chopped tomato

1/4 cup sliced cucumber

1/4 cup sliced bell pepper

1/4 cup sliced button mushrooms

1/4 sliced avocado

1 tsp. extra-virgin olive oil

fresh lemon juice

 

Directions: Place spinach in a large serving bowl. Top with chicken, tomato, cucumber, bell pepper, mushrooms, and avocado. Drizzle with oil and lemon juice; toss gently to blend.
