Paleo Pulled Pork Stuffed Sweet Potatoes

Ingredients:

  • 2 lbs. boneless pork loin. Center cut is what I use.
  • 2-6  sweet potatoes, I prefer the smaller, because too much sweet potato is too much for me, so I like to have more servings.
  • 1/2 red onion, very thinly sliced.
  • 2 green onions, chopped, I use my fav $5 herb scissors, but a knife works just fine. 
  • 2 garlic cloves, minced. 
  • 1 cup beef stock
  • 1 tsp. chili powder
  • 1 tsp. paprika
  • ½ tsp. ground cumin
  • ¼ cup apple cider vinegar
  • 1 cup BBQ sauce, or more for taste. *Here are 16 paleo, homemade, BBQ sauce recipes.


Directions:

Combine the chili powder, cumin, paprika, and salt and pepper to taste and rub evenly over the pork. Place the onion, garlic, pork, and beef broth in a slow cooker, yes everything but the apple cider vinegar and BBQ sauce, and cook for 6-8 hours on low. You’ll know when it’s about done, pork comes apart very easily, when you just stir it, when it’s done. 

When you’re about an hour out from done, preheat your oven to 400 F. Wash your sweet potatoes and stab with a fork. Placed on a foil lined sheet, trust me, sweet potatoes make sticky messes, you’ll be glad you did that. Mine usually bake 45-60 minutes.

When those are about 1/2 way done, you can add the BBQ sauce and the apple cider vinegar to the slow-cooker, and cook for another 30 minutes.

Slit each sweet potato down the middle, like any baked potato, and just fill fill each sweet potato with the pulled pork. Sprinkle with green onions and enjoy!
