- 2 Chicken Breasts, Diced
- 2-3 Medium Sweet Potatoes, Baked in Advance
- Assorted Veggies of Your Choice (Zucchini, Broccoli, Cauliflower, etc) , Chopped
- 2 Cloves Minced Garlic
- 1/4 Onion, Diced
- 1/4 Cup Dried Cranberries
- Coconut or Olive Oil
- Recommended Seasonings: Himalayan Salt, Pepper, Oregano
Heat oil in skillet. Add onions and let soften, add garlic.
Add in chicken, saute until it is lightly cooked on all sides.
Add in all veggies.
While those are cooking spoon out about half of the sweet potatoes, if not more, up to you. Add into the skillet and mix into mixture. Create the “stuffing”.
Add the cranberries and seasonings at this point and mix. Put back into sweet potato shells and enjoy!
