- 2 pounds organic buffalo meat.
- 3 Slices No Nitrate Added Thick Cut Bacon. (Black Forest from Whole Foods is the best!)
- 1 onion
- 5 cloves garlic
- 1/2 Bag Baby Spinach
- Any other random veggies that are about to go bad =P
- Italian Seasoning Blend to Taste ( I actually use the mix from Penzeys Spices, it’s amazing!)
Mix the onion, garlic, bacon together first. Add in spinach and extra veggies. Add in half the meat, and all the seasonings. Then add in all the meat! Basically just smash that all together 😉
Roll into 2″ balls and flatten onto a cookie sheet. Use one with a lip on it, a flat sheet will make you sad when it’s all over your oven. Bake at 400 ish degrees. Watch them, about half way through they will start to get round. Smash them down, drain the juice off your sheet. Should just be a few more minutes from there and you’re done. I think 15 minutes including the draining, is more than enough time.
Yes they will be kind of green, that’s science 😉 Just like sausage but pure homemade goodness!!!
