1 lb organic ground turkey (or any lean ground meat)
1/2 onion, chopped
3 cloves garlic, pressed
1 green or red bell pepper, diced
2 Tbsp olive oil
3 tomatoes, chopped
1 zucchini, chopped into small squares (I used yellow, green would work)
1 can organic tomato sauce (16-20oz)
1 tsp Himalayan salt
1 tsp ground black pepper
3 Tbsp cumin, or to taste
1/2 Tbsp cayenne pepper, or to taste
Pinch of red pepper flakes, or to taste
Brown and drain your ground turkey.
Heat olive oil and garlic and sauté onions and peppers until tender. Add in tomatoes and all other spices. Once softened add tomato sauce and stir well.
Once heated add browned meat and zucchini. Bring to a boil. Turn down heat.
Cook on low uncovered for 40 minutes, sirring occasionally. Remove from heat and let sit for 5-10 minutes.
